WIAW: Pancake Day!

One of the best days of my year, every year…PANCAKE DAY!! I learned from Ellen on Twitter yesterday that in America you call today “Fat Tuesday” instead, and that sounds pretty darn good to me too;)

I don’t do anything by halves, and Pancake Day is no exception. That means pancakes at every meal….oh yes!
Raspberry-almond pancakes for breakfast with banana and maple syrup
I love raspberries. I love almonds. I love pancakes. Clearly I had a stroke of genius when I decided to put those three things together;)
Raspberry-Almond Pancakes
Ingredients (4/5 pancakes, serves 1)
- 1/3 cup flour (I use WW spelt)
- 2T oats
- 3/4t baking powder
- pinch salt
- 1 packet stevia/1T sugar
- 2T chopped flaked almonds (optional)
- 1T non-dairy spread, melted (or oil)
- 3/4 t almond extract
- 1/2 cup frozen raspberries
Instructions
1. Mix together flour, oats, baking powder, salt, sweetener, and almonds (if using).
2. Add the milk and extract and stir until combined.
3. Partially defrost the raspberries (I blasted in the microwave for ~30 secs), then fold gently into the pancake batter until just combined.
4. Make your pancakes over a medium-low heat, and enjoy!
P.S. You should totally do what I did and warm some almond butter and mix it with maple syrup and then drizzle away. Best pancake topper ever!!
Lunch involved banana pancakes with a generous drizzle of maple syrup…
And an pictured salad on the side to get in my veggies!
I had a proper dinner after training of brown rice, lentils and veggies…
…but followed it with four crepe-style pancakes with lemon+sugar:) I am the worst at flipping, so I’ll just pretend that my pancakes turned out looking like these:
They tasted AMAZING and it was a good thing that Pancake Day fell on a day when I have a session, because I am always super-hungry after speedwork! It meant I could fit more pancakes in my belly than usual haha!
After a week off, I finally got to run again yesterday! I thank God for every step He grants me, and being able to run today truly made me so grateful for that gift!
Looks like this flu virus is hitting us runners hard though, because this was Liz Yelling (GB Olympic marathon runner)’s Facebook status yesterday:

Yesterday’s session was a short and easy one: 4 miles, with 4x300s (~51 secs each) and 500m recovery jog between each. Because yesterday’s workout was so short and felt great, I did my last workout before the race today:
It took some mental strength to not give up in that HOT gym! It was like a sauna in there!! I miss the treadmills at the nice gym I went to last week that each had their own built in air-con to fan you whilst you ran. That was perfect! This running mag got me through because it had ‘mind over matter’ written on the cover, and when things got tough I just looked at that and it helped:)
There’s nothing like thinking of your planned post-run coffee date to make you run faster! I met up with a few friends after my workout and we stayed there chatting away until we were chucked out at closing time.
My major achievement of the week has been that I have done core work every day since Sunday! Don’t laugh, I know it’s only been three days, but I have joined the #plankaday thing on Twitter, so I’m being held accountable now! I am always told off by my physio for not doing enough core work, so I’m going to make her proud of me, and I know that it will help me stay injury-free, so it’s definitely worth it! And with that, I’m off to get my core on before bed!
Did you celebrate Pancake Day or Fat Tuesday? Clearly I did;) I am so happy that Lent has started…I love it!
Do you like treadmill running? Not really. I can stick it out now and again, and it did help with my injury comeback, but give me outdoors any day!
Do you do regular core work? What is your favourite core move? I do core work every day now, but it used to be about once a year;) I love doing pikes on a stability ball!

Recovery and Gingerbread Pancakes

Hey friends! Had a good weekend? I’ve loved this weekend! After a crazy Saturday, a chilled Sunday was just what I needed!
Despite all the stretching, foam-rolling and ice-bathing yesterday, sadly nothing could prevent the onset of DOMS today! Lesson learned: always always ALWAYS do a cooldown after an intense, hilly race!
But it’s fine, I have recovery sorted. I got nine hours of sleep last night (I get less than seven normally, so this was blissful!), and after limping out of bed, started recovery part II. Pancakes.
Pancakes are the recovery food of champions. Especially gingerbread pancakes drizzled in maple syrup…
Gingerbread Pancakes (based lightly on CCK’s pancake recipes)
These are hands-down the best pancakes I have ever made. They have a light, fluffy texture, and a deep gingerbread flavour. Goes perfectly with maple syrup.
Vegan, serves 1 hungry person
- 1/2 cup wholewheat flour (I used WW spelt)
- 1/2 t baking powder
- 1/4 t baking soda
- 1/2 t cinnamon
- 1/2 t ginger
- 1/4 t ground mixed spice
- 1 t egg replacer
- 1 T molasses/muscovado sugar (or other brown sugar)
- 1 T non-dairy spread, melted
- ~1/3 cup non-dairy milk
- Combine dry ingredients and mix well.
- Stir in wet ingredients, then make your pancakes over a medium-low heat, and ENJOY!
I think I will be having these pancakes every Pancake Sunday until I die.
The sprint to church (I was pretty late!) was made very uncomfortable with a belly full of pancakes! Worth it though ![]()
Recovery part III came in the form of an easy elliptical workout. I just pedalled away at a steady pace on low resistance for an hour to get the legs moving. I was sweating like crazy though, because my gym is being completely renovated, so the air-con was off today. I felt like I was working out in a sauna!

Straight afterwards, I hit up Starbucks with a friend. The falafel panini was calling my name…
Ordered a gingerbread latte to-go as well. Clearly I was in a gingerbread mood today! ![]()
This evening was all about the recovery foods.
Wholewheat giant couscous, lentils, and red pepper
But obviously, nothing speeds recovery like the magic combo of peanut butter and chocolate!
It’s perfectly normal to dip chocolate chips in PB, right…? ![]()
Have you ever had serious muscle soreness before? Yes, I remember the first time I did BodyPump, I couldn’t move for a few days afterwards haha!
Are you a gingerbread fan? I love love love gingerbread! Cake, cookies, pancakes, lattes, ANYTHING gingerbread flavoured is awesome!

Why I am not a Fashion Blogger

Happy Halloween! Having a good start to the week guys? Mine was good, but my legs aren’t feeling so great! Nothing serious, but I guess Saturday’s race effort took it out of them a bit, because after a very tough, hilly mile I had to stop immediately (throw up) and sit down, so I didn’t cool down or stretch! My illotibial band is a bit tight, so I’ve been resting it (just doing yoga) and stretching it gently. The foam roller has been my best friend.

It is definitely a proven fact that pancakes help with recovery.
Especially thick, pumpkin-caramel pancakes drizzled with syrup ![]()
Caramel-Pumpkin Pancakes (adapted from my pumpkin spelt pancakes)
Vegan, can be gluten-free, serves 1
- 1/2 cup flour (I used wholegrain spelt)
- ~1/2 pot caramel soya pudding (1/4 cup)
- 1/4 cup canned pumpkin
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice (or mixed spice)
- 1 tsp baking powder
- Mix all the ingredients together in a bowl. The batter will be very thick (this makes thicker pancakes- if you want thinner ones just add milk).
- Make your pancakes over a medium-low heat, and ENJOY!!
These are so yummy, and totally worth being left with only 2 minutes to get ready for church. They’re used to me turning up with unbrushed hair or or once straight from XC training covered in mud! Yesterday’s episode involved me turning up with my PJ top under my coat cos I ran out of time…but we all know pancakes are more important anyway ![]()

Later in the day, I went to the shops again, and this time not only did I get a latte…![]()
Gingerbread soy latte…sooo good!
…I got some NON-RUNNING clothes and shoes!
Don’t tell me that these aren’t the coolest boots ever:
They have REINDEER in the lining!!
I also bought these leggings, which I love and have pretty much been wearing day and night since purchase.
Ok, so now the mystery of why I am not a fashion blogger is solved, I can get back to my regular outfit of choice…
I want them all. And this was only half of them! ![]()
I also found these shoes on Pinterest, and I want them so badly!!
I know, I’ve got a great fashion sense ![]()
What is your current favourite item of clothing? Those boots, and leggings because they are so warm and comfy! And Nike Tempos always!

A Very Lucky Monkey

I was a very lucky monkey today.

I slept in my monkey onesie (it is the most warm and comfy thing on the PLANET!), so when the postman rang early in the morning to drop off two packages for me, he got a nice surprise ![]()

The BEST package was from my running buddy Tara at XC Foodie! I swear she’s my sister from another mister, and some day we will meet up and be real life running buddies. Anyway, our birthdays are exactly one month apart, so we sent each other (belated!) birthday packages! She sent me SO MANY AMAZING THINGS!!
Homemade Chocolate Walnut Butter(!!), Kashi chocolate coconut bar, cinnamon roast almonds, chocolate PB Odowalla bar, Organic Food Bar in chocolatey choc chip flavour, Kashi Heart to Heart, Food Should Taste Good multigrain snacks, Justin’s Maple Almond Butter, trail mix, Annie’s Bunny Grahams in chocolate and chocolate chip, Bear Naked granola, and Clif bars in Carrot Cake and Peanut Toffee Buzz flavours!!
There were immediately some casualties whilst I was waiting for my breakfast:
My latest addiction.
The BEST bit of Tara’s package was actually the non-foodie items! She sent this book, as it is one that has inspired her so much:![]()
Her awesome idea is that we share the love by passing this book around to other bloggers! So I’ll read it, then write my name in the cover under hers, and send it off to somebody! So expect this book SOON runner friends! ![]()
Tara also made me a RUNNER’S SHIRT!! How cool is THAT?!

I am never taking it off. Ever. I love it too much. LOVE YOU TARA!!
The other package was some essentials I ordered from iHerb. And by essentials, I obviously mean this:
My fave nut butter. I almost cried when I finished my last jar! ![]()
Basically, this morning was just the best ever! Packages and my favourite breakfast…OIAJ!!
Vanilla Protein Oatmeal (1/2 cup oats, 1 scoop vanilla protein powder, 1 cup soy milk, 1 cup water) in a PB&Co jar topped with raspberry jam ![]()
After breakfast, I headed out to enjoy the last of the sunshine (apparently regular October weather starts tomorrow here haha!)…
…and then hit the gym for a quick strength training and plyometric workout. My coach recommended plyometrics to help with running economy (you can read about it and see the workout I did here) and they are sure not easy, but they are FUN! I refuelled with some banana milk:

They were all out of chocolate milk at the health store. I would have thrown a tantrum normally but I like banana milk too and the lady promised to give me a free choc one to make up for it next time because she knows it’s my fave! WIN! ![]()
Oh, and guess what lunch was?

Long time no see!! Haha sorry friends, my computer got attacked AGAIN this weekend by a virus, which meant that I lost my planned Running Chat post for Saturday waah!! But I’ll either post it tomorrow or just wait till next Saturday…I’ll see what I’m feeling!
Anyway, I had an AMAZING weekend!! I spent my Saturday chilling with some friends…
Maturity at its finest
We went out for dinner at an Indian restaurant which had the best food in the WORLD!![]()
Chana Masala, Tarka Daal, and Stuffed Vegetable Paratha. I ate every bite and had food triplets afterwards ![]()
We spent the rest of the evening chatting, watching movies and eating Outback Animals:![]()
They are SO FREAKIN GOOD! I’ve gotten my friends addicted to these cookies too ![]()
I started my Sunday in the best way with a great early morning workout:
I KILLED it in this workout, and it was sweat+endorphins city by the end!!

I actually showered after this (and washed my hair!!). Miracles can happen if you believe.
Of course, following that it was PANCAKE TIME!! Man I love Pancake Sunday!!

Oh, and I made the most AMAZING (sugar-free!) Cinnamon Raisin PB which I have been having non-stop for the past few days…

Random Thoughts

HEY friends!! Hope you’ve had a good weekend!
I just want to take a moment to recognise September 11th. I remember this day so vividly, and the panic that came with the fact that we had family living right near Ground Zero, and we couldn’t get hold of them. Thank God, they were safe, but what happened that day was something that irrevocably changed the world and the lives of so many. Those lost heroes and their loved ones are in my thoughts and prayers <3

Sorry for the lack of postage yesterday friends! I had a concert to play in and then a party afterwards. After getting home at 2am, I didn’t really feel like posting haha! Since I am still tired and running on sugar (as usual!), this post will be completely random and pretty much just whatever comes into my head…
I am a total creep. This is definitely one of the creepiest photos of me ever. Keep your children away.![]()
Also my head looks HUGE here! I think my body must look small in comparison to my giant head! ![]()
I have a Pancake Dance. Basically, when I’m making my pancakes on Pancake Sunday, there’s a song and a dance that I do whilst they’re cooking. My brother stole my camera and got this flattering shot of me before I knew what he was doing:

I never realised how awesome my dance skills were until I saw this photo. Definitely a future career right there.
I have been TOTALLY addicted to my peanut roasted chickpeas recently.

There is currently no water in the house, so I’ve been going down to the gym every day to use theirs.

49 Days!!

This morning I woke up and I didn’t feel like pancakes.
That blatant lie is actually painful to even THINK! I can’t remember the last Sunday when I DIDN’T feel like munching my way through some pancakes!! Note To Self: if you wake up too late and leave yourself 5 minutes to make your pancakes, they WILL turn out funky-looking…
Haha pancake fail!! But they tasted AMAZING!! They’re Katie’s Chocolate Chip Cookie Dough pancakes, but with peanut flour for extra yumminess and protein, and I even tried to do a Katie-style syrup drizzle!
And on the side…

It’s been at LEAST two days since I had them, which is 48 hours too long really.
After church, I headed to the gym to rock out my planned 9 miles. And rock it I did!!
While I prefer running outside 10000 times over, running is running, and it feels SO GOOD to be doing it again!! ![]()
I’m going to pretend that it didn’t take me about 5 seconds to figure out how many fingers I needed to hold up.
You know what makes a great post-run snack?
A high-protein chocolate muffin and yoghurt. I made the muffins yesterday and they are seriously the best I’ve had!! Remind me to share the recipe soon!!
I continued the chocolate theme (obviously!
) by making Mama Pea’s chocolate lava cakes for dessert after lunch:

The Perfect Sunday

HEY friends!! Hope you’ve had a great weekend!! If you’ve been reading my blog for a while, you’ll know how much I LOVE Sundays, for my typical Sunday Trio: Pancakes, Church, Long Run! After missing this for about a month now thanks to trips abroad, it is SO GOOD to get back to my favourite routine!
It all started with the pancakes. I should learn my lesson about waking up early enough to not have to sprint to church, which is very uncomfortable with a belly full of pancakes…
Double Chocolate Brownie Batter Pancakes. Tasted like heaven. Especially with added PB (instead of applesauce) and drizzled with maple syrup. Make. These. NOW!! I also had a PB&J sandwich on the side!
And then it was CHURCH time!! The sermon was GREAT (about making God your best friend <3 ), and thankfully the pastor is used to me eating during the sermon ![]()
That was my pre-run fuel! My run today was SO AMAZING!!! You know those runs that you just want to go on forever? (But you know they can’t because your physio will hunt you down and use her awesome arm muscles to put you in a unbreakable headlock). It was one of those runs ![]()
This was the first run I’ve had since my injury that I’ve felt like myself again when running! It was the best feeling! I just spent the hour chatting with God and smiling like a loon the whole time! ![]()
In the afternoon, I also did my last New Rules Of Lifting For Women Stage 1 workout!
My thoughts on that and on some other stuff coming at ya tomorrow! ![]()
Oh, and I tried this protein powder afterwards that I bought in Whole Foods in the States:![]()
It has pretty much the BEST nutritional profile I have ever seen!! 20g protein, all of your B12 and SO much iron!! Unfortunately, I tried it and gagged. It tasted like compost. No kidding on the greens! ![]()
So some GOOD eats for you from the last few days!!
Yesterday’s breakfast was pretty much the best in the WORLD… Oats In A Jar, with White Chocolate Wonderful!! ![]()
I made sure to leave at LEAST 10000 servings in the jar ![]()
I get worse every time. I think next time I’ll just skip the empty bit altogether and just stuff my oats right in there with the PB.
Lunch:
Sweet tater stuffed with beets, Sabra hummus and marinated tofu cubes (AMAZING combo btw, which I’ve been having non-stop in sandwiches recently!!) with more beets and mushrooms on the side.
Apple chunks dipped in my New Favourite Nut Butter!! Justin’s Chocolate Hazelnut is the best EVER!! And made with real chocolate!! Sadly it’s $12 a jar…worth every penny though ![]()
Warm WW pita strips double/triple/quadruple dipped in hummus and guacamole ![]()
Banana Protein Oats! (1/2 cup oats, banana protein powder, banana, soy milk and lots of PB&Co Cinnamon Raisin Swirl nut butter
)
And my late night snack every night whilst blogging:
PB Puffins straight from the box. Cos I’m classy like that ![]()
And Fun Fact of the Day: I have been home a week now pretty much, and I still haven’t started finished unpacking yet. Instead, I sit in my suitcase and hug my peanut butter.
Don’t think I’m kidding (well, except for the last bit!
). Will someone please come and unpack for me?! I’ll pay you in hugs and PB spoons! ![]()

Do you use protein powders? If so, what brand? I don’t THAT often (only usually after lifting), and usually use Spiru-tein, cos I love all the flavours!!
Fave cereal? Currently, PEANUT BUTTER PUFFINS!! They are addictive!!
