Socca Pizza and getting out of The Dark Ages

I am SO happy!! I just bought something super exciting…you’ll see later in the post!!

I started my morning in the best way- a run! Fuelled by my usual pre-run brekkie:
‘Easy’ run: 4 miles avg pace 7.59 min/mile + 5 hill sprints. So the hill sprints weren’t actually part of the plan, but I saw My Hill…
…and couldn’t resist! ![]()
Post-run, I had an amazing GM to refuel…![]()
…topped with coconut butter and this cereal that a lovely friend gave me:![]()
So delicious! Adding coconut butter to the mix and topping it with it was AMAZING!!![]()

So I have an awesome recipe for you lucky people today!! It was time to try out socca pizza for ma dinner! Ever since I made socca for the first time last week, I wanted to try this. And the results were DELISH!![]()
Socca Pizza
(serves 1 hungry person)
- 1 cup gram (garbanzo bean) flour
- 1 1/4 cups water, or 1/2 cup milk+3/4 cup water
- 1 tsp salt
- 1 tbsp nutritional yeast (optional)
- Basil and rosemary for seasoning (optional)
- Preheat oven to 200C/390F. Grease WELL a pizza pan (I used a pie plate)
- Mix together all ingredients and pour into pan.
- Bake for 35-40 mins until golden brown.
- Get friendly with your toppings and ENJOY!!

Okay, so I made the rookie mistake of not greasing my pie plate, so I couldn’t get out my pizza! Ooops!
I ate it straight outta the pie plate instead! ![]()
Topped with tomato paste, vegan cheese, peppers and sliced cherry toms:
SO yummy, and tasted just like pizza, only better! Much healthier too- full of protein! Pizza cravings=satisfied ![]()

Okay, so my big excitement of the day week month year so far?
Yeah, this is what happens when my momma gets behind the camera...she's not quite so good with technology!
Okay, so previously had been living in The Dark Ages, with a 100 year old blender that barely worked…and being on a student budget meant I couldn’t afford it before. BUT pay from a gig I did a while back came through today and I splurged! ![]()
WHAT on earth does all THAT mean?! I hate instruction manuals…but I LOVE my new processor!! So preeeety…![]()
So if I ever figure out how to turn it on, you’ll see some awesome stuff on here soon! I have billions of recipes and ideas lined up already!! ![]()

Tomorrow, I have such a busy day!! I’m hoping I’ll be able to get to the gym before church too…but I’ve never been good at getting up at 6am…we’ll see how that works out tomorrow! ![]()

Have you tried socca yet? If you haven’t, you MUST rectify it SOON because it’s not only DELICIOUS but super GOOD for ya! Socca pizza is possibly one of my favourite meals EVER!!

What was the last exciting purchase you made? TOTALLY this food processor for me!! Also the packet of chocolate chips I bought today was a source of great excitement too

And do you find it easy to get up really early for workouts? The problem for me is that I get to bed so late, so getting up before 7am means too little sleep!! But I love morning workouts when I can get them in- nothing better than a sweaty morning sesh! ![]()

Exciting times #3

Okay, so if you didn’t realise already, I get excited a lot. Over every little thing. I put this constant high down to the sugar intake (DATES, I’m talking to you!), and clearly I get excited very easily- see my other two excitement posts for proof!
So, seven exciting things for today!!

Excitement: I am no longer a crunchy virgin.![]()
Before this morning, I had never had crunchy peanut butter before. If you think that’s weird, pre-blogging, I had never even had nut-butter before!
Well I gave away my flower in style. (Friends reference #1001!)
Excitement: COCONUT BUTTER!!
Amazing reader Angie from the US read my moans about lack of coconut butter in the UK and sent me some! Angie, seriously, we are now BFF’s.
Not only did Angie send me coconut butter, but she also threw in these too:

Excitement: A ‘gym regular’. I overheard one of the guys at the gym in the weights area (where the good treadmills are!) say “Oh look, it’s crazy runner girl again!”. HA they don’t know the half of it…![]()
Excitement: The Best Speed Run Ever! A speed interval run totally kicked my butt today! I was literally dripping sweat, and so red I thought my face might explode. I looked unbelievably attractive still obviously, but I thought I’d save you the sight anyway…

Repeated for about 40 mins + a 5 min warm up and cool down. I was totally motivated by Paula!
Paula Radcliffe is actually my heroine. If you are mad and don’t know who she is, she holds the world record for the fastest women’s marathon time, at 2:15:25!!
Anyway, I’ve just started reading her autobiography, and it’s so good! Every time I needed a bit of inspiration on the ‘mill, I just looked over and saw her face and was inspired. I know, I know, I’m lame!!
I finished up with a few mins on the elliptical reading the book using Janae’s life-saving hairband trick.![]()
Health store people are just too nice. I love them.
Excitement: A delicious dinner.
‘Cheezy’ quinoa stuffed mushrooms with tempeh, more ‘cheezy’ quinoa, and cherry toms.
‘Cheeze’ sauce
- 1/4 cup Nutritional Yeast flakes
- 1/4 cup unbleached all-purpose flour
- 1 tsp salt
- 2 tsp cornflour/cornstarch (optional)
- 1 cup water
- 1/4 cup vegan margarine
- Spices for flavouring (optional)
- Mix the dry ingredients (except spices) together in a small pan. Add the water and cook over medium heat, whisking, until it thickens and bubbles.
- Cook for a minute more, or until desired thickness is reached.
- Remove from the heat and add margarine. Stir until the margarine has melted in. Add spices if desired (I added paprika for some spiciness).
This sauce is great! Makes about 2 cups worth, is high in protein, and leftovers keep well in the fridge. I just made a serving of quinoa too, mixed in 1/2 cup of ‘cheeze’ sauce, put into some destalked large mushrooms, and grilled for 5 mins. Delish! ![]()

The second time in the last three days that I’ve had Katelyn’s amazing mousse. I love me some raw chocolate mousse…holy yummo.

Buffet Monster

It’s Christmas Eve!! And that means…SANTA’S COMING! Can you tell I’m excited? ![]()
I also had huge excitement over my purchases from yesterday! So as soon as I woke up, I set to work ON Katie’s melties!
They’re in the freezer now, and will be consumed soon! ![]()

Oh…cinnamonyness…mmm…. Loved this cereal! It couldn’t not be great though, since it had cinnamon in it!

I didn’t have a humungous breakfast, as I was heading off to a friend’s party. I had planned to make chocolate vegan cupcakes to take along, but I ransacked the kitchen and couldn’t find any cocoa powder!
All I could find was ‘light’ instant hot chocolate powder!
Thought about using this instead, but I’m pretty sure it wouldn’t work very well!
There was a huge buffet for lunch at the party, and bless her she provided vegan food (HOUMOUS!) and even told me at the start exactly what foods were and weren’t vegan!

Looks alright doesn’t it? Well that was my innocent first plate. Numerous other helpings followed, then the plate was thrown aside, and I dived right in there! ![]()
As soon as I got back from that party, I went out for a dinner with old friends! We’ve known each other since we were kids, but don’t see each other as much any more sadly, so it was great to catch up today!![]()
It gave me an excuse to get a bit dressed up too! ![]()
We ate at Pizza Express, which is a lovely Italian restaurant if you’ve never heard of it.![]()
We ordered doughballs to share for our appetizer, and since there weren’t any vegan mains on the menu, I just ordered the huge ‘Bosco’ salad without the mozzarella:
Warm garlic mushrooms, baby mozzarella, avocado, roasted tomatoes, baby spinach, rocket, balsalmic syrup and dressing
It was so big, I couldn’t finish! Trust me, that’s a rare occurrence! ![]()
There weren’t any vegan desserts either, but they did have an almost vegan ‘dolcetti’ (small dessert), which I ordered without the mascarpone. However, the waitress forgot that part, so I just ate around it:
The baby figs were lovely! I’ve never had a whole fig before, but they were delicious! The whole meal was great, and I successfully proved to my sceptical friends that vegans can eat out at ‘normal’ restaurants! ![]()
This morning, I’m off to the gym to get in a quick workout before starting the busy Christmas preparations! There’s my dish (Festive Squash Jalousie) to veganise+bake ahead and freeze:![]()
And of course, tons of presents to wrap and cards to write! Since this is technically Thursday’s (late) post, I might do another one later tonight for you lovelies…
So what are you hoping Santa will bring you tomorrow? I know one of the things he’s bringing me (he left his receipt lying around!
) and can’t wait to show you tomorrow!! And how are you spending your Christmas tomorrow? With family, friends, or both? We’re having our usual of all the family round! And our family from New York our flying in today to spend Christmas with us, so I can’t wait to see them again!
