Bring It On.


I have to admit, until about 10 minutes ago, I was totally freaking out. Both my exam and audition are tomorrow, and then I’ve got a very important race on Saturday. Oh yeah, and I’ve just found out that I didn’t switch my phone contracts properly, so I’m still using my old contract on my iPhone and have therefore racked up a massive bill thanks to data usage. And since today is a rest day, I can’t even sweat out my stress! So I’m turning to the next best thing to chill me out…


Salted Chocolate Peanut Butter Bars

Prep Time: 15 minutes

Cook Time: No bake

Ingredients (16 bars)

    Peanut Butter Layer

    • 2 cups powdered sugar
    • 1.5 cups finely crushed vegan cookies, e.g. graham crackers/digestives (I used Lotus caramelised biscuits, which was definitely a good choice!)
    • 1 cup smooth natural/lightly salted peanut butter
    • 1/2 cup non-dairy spread, softened
    • 3 tablespoons non-dairy milk

    Chocolate layer

    • 1 cup vegan chocolate chips
    • 6 tablespoons non-dairy spread
    • Fleur de sel or sea salt (about 1/8t)


    1. To make the peanut butter layer, mix together the cookie crumbs and powdered sugar. Then add the peanut butter, milk and softened margarine (I microwaved it for 10 seconds) and stir well. The mixture will be very thick.

    2. Press into a foil-lined 9×9 square cake pan and set aside.

    3. Make the chocolate layer by melting together the chocolate and margarine. Melt on the stovetop, or microwave until fully melted.

    4. Spread across the peanut butter layer, and sprinkle evenly with a little dusting of fleur de sel.

    5. Chill in the fridge for at least an hour, and then cut into squares.

    I think my panicking is mostly excitement though. I am EXCITED to rock my exam so I can achieve my dreams, I am EXCITED to show what I can do in my audition, and I am EXCITED to run my best at round two of Regionals and have the opportunity to qualify for Nationals! BRING IT ON!!

College is on going assessments, so i was going to say its not that important, but i guess it kind of is, given money universities want distinctions in a lot of the units & the only one i have done so far i got a merit. So i really should be stressing about the fact that suffering vertigo for the last 3 days has meant i can’t drive & i have an open book test on monday in science…..

      Instead what I AM stressing about is the fact i’m piling on the pounds because since before xmas i’ve been so ill & exhausted i just haven’t had the energy. Plus i’m supposed to be training for the Brighton Marathon. Oh, on the up side sitting around getting fat (or it could be the iron tablets i’ve been taking) has restarted my monthly cycle, like you. I wish i was as excited about it as you are – i know i should be.

      I’ll just say it right now – you’re going to crush your exam, your audition and your race. I believe in you, I know you’re one of life’s winners, and please don’t be anxious about things because we all know you’re fabulous.

      I also loved reading your race recap. I rode a mountain bike into a tree once, but I’ve never run into one. I also would have acted with a lot less grace than you and punched that girl edging you out on the nose. She 100% deserved the DQ.

    19. Oh I’m so sorry! Isn’t it always that you get ALLLL the stress piled into a few days? Why is that? It always makes me go into such a fizz. I’m just a generally anxious person, so even something like taking my rabbit to my bedroom can seem like a really huge event. All my stress is hitting when holidays end for me soon; I’m really not looking forward to the tsunami. I’m going to need so much yoga. Speaking of which; how are you doing with your yoga, girl!? I’m so proud to say I do it every week for an hour now. I FEEL SO PROUD. It’s the hight of self control for me, I’ve always been shocking at it.

      That is very annoying about your phone, but again stressing about it won’t make it better, so just get on with it.

    22. GET IT!!!!!!!!!!! You are totally gonna ROCK the audition, exam, AND race – someone as passionate about what they do as you are pretty much can’t help but succeed. I can’t wait to hear how they all go! And wow, those peanut butter bars…no wonder you don’t shower right away after running, I’d DEFINITELY need to consume those before even thinking about doing anything else hah! There’s not toooo much exciting going on in my life, but I’m pumped to start a new semester of classes again on monday at a new school, and to finally ramp up the running again!
