Recovery and Gingerbread Pancakes

 

Hey friends! Had a good weekend? I’ve loved this weekend! After a crazy Saturday, a chilled Sunday was just what I needed!

 

Despite all the stretching, foam-rolling and ice-bathing yesterday, sadly nothing could prevent the onset of DOMS today! Lesson learned: always always ALWAYS do a cooldown after an intense, hilly race!

 

But it’s fine, I have recovery sorted. I got nine hours of sleep last night (I get less than seven normally, so this was blissful!), and after limping out of bed, started recovery part II. Pancakes.

Pancakes are the recovery food of champions. Especially gingerbread pancakes drizzled in maple syrup…

Gingerbread Pancakes (based lightly on CCK’s pancake recipes)

These are hands-down the best pancakes I have ever made. They have a light, fluffy texture, and a deep gingerbread flavour. Goes perfectly with maple syrup.

Vegan, serves 1 hungry person

  • 1/2 cup wholewheat flour (I used WW spelt)
  • 1/2 t baking powder
  • 1/4 t baking soda
  • 1/2 t cinnamon
  • 1/2 t ginger
  • 1/4 t ground mixed spice
  • 1 t egg replacer
  • 1 T molasses/muscovado sugar (or other brown sugar)
  • 1 T non-dairy spread, melted
  • ~1/3 cup non-dairy milk
  1. Combine dry ingredients and mix well.
  2. Stir in wet ingredients, then make your pancakes over a medium-low heat, and ENJOY!

 

I think I will be having these pancakes every Pancake Sunday until I die.

The sprint to church (I was pretty late!) was made very uncomfortable with a belly full of pancakes! Worth it though Smile

 

Recovery part III came in the form of an easy elliptical workout. I just pedalled away at a steady pace on low resistance for an hour to get the legs moving. I was sweating like crazy though, because my gym is being completely renovated, so the air-con was off today. I felt like I was working out in a sauna!

Straight afterwards, I hit up Starbucks with a friend. The falafel panini was calling my name…

Ordered a gingerbread latte to-go as well. Clearly I was in a gingerbread mood today! Smile with tongue out

This evening was all about the recovery foods.

But obviously, nothing speeds recovery like the magic combo of peanut butter and chocolate!

Have you ever had serious muscle soreness before? Yes, I remember the first time I did BodyPump, I couldn’t move for a few days afterwards haha!

 

Are you a gingerbread fan? I love love love gingerbread! Cake, cookies, pancakes, lattes, ANYTHING gingerbread flavoured is awesome!

 

What are you looking forward to this week? Thanksgiving! (My family is half American, so we do celebrate!)

  1. Ouch, I feel you on the muscle pains! For me it’s probably a tie between the first time I did v-core (intense abs workout) and body pump as well! Those pancakes look incredible and I love gingerbread so might try making them next weekend.

    This week I’m looking forward to recovering myself, It’s my 4th week of training so I’m running half the amount I did this week.

    • Hmmm your v-core thing reminds me I need to do more core work! I know I’m gonna be sore after not doing it for so long though! :P

      Enjoy your cutback week! I often find I’m MORE sore in cutback weeks for some reason…I guess it all catches up with me! :P

  2. Ooh sorry you’re having soreness!! A few days ago my inner thighs were super sore. I just stretched and stretched them till they didn’t hurt. :) That panini looks delicious!!! And actually saunas and sweating immensely is good for your skin cause it washes out the bacteria!! I had a nice long sweaty run this morning. I’ve actually been craving gingerbread!! So I make gingerbread pecan butter. YUM. :D

  3. As delicious as gingerbread pancakes sound, I think the best recovery food is most definitely chocolate/vanilla milk. Though I’ve started eating ice cream after hard workouts because it does have carbs and protein!
    I’m gonna have MAJOR DOMS when I get back into running again. It always happens, but you just gotta keep pushing through!

  4. Yumm!I have never had gingerbread pancakes or the lattee.. what am I doing with my life?!?! Yes, I believe it is completely natural to dip chocolate in PB ;D The most perfect combo ever. I have been sore for like a week straight before!! I just did very light workouts the rest of the week. I like being sore but that sore is no fun haha. Have an awesome Thanksgiving girl! I’m looking forward to that too :)

  5. I like gingerbread, but not as much as chocolate/peppermint for the holidays. :) I always get super duper sore after I stop horseback riding for a while then get back into it. Hope you get the soreness gone soon!

    And I have never seen those falafel paninis at Starbucks before! They must not carry them in the states yet. Hopefully soon! It looks delicious.

  9. hmmm gingerbread definitely depends…the pancakes sound good, and lattes are my favorite thing ever!! but I don’t like the cookies haha. Nice recovery workout!! the legs always feel better after getting some blood flow for sure. this week, strangely, I’m looking forward to some muscle soreness from starting to run again!! woooot!

  11. May I just say that I’m a *little* jealous that your Starbucks has falafel paninis??? Come on, America, get with the program!
    And as far as recovery goes, I actually passed up the chance to have a pancake Sunday, believe it or not. I ran the half marathon this morning and any run over 10 miles just puts my stomach in a sensitive place. But I definitely had a bagel AND oatmeal several hours later! Plus, there were free massages after the race, so I’m hoping that helps me get out of bed in the morning :) Do any of you ever have issues with a weak stomach during or after a run? I need some suggestions!

    • Oh no, American Starbucks doesn’t have falafel paninis?! You guys are missing OUT- they are awesome!!

      Great job on your half mary!! A free massage makes it all worth it ;) Yup, my stomach is very weak after a long run or hard workout, so I usually have chocolate milk or a protein smoothie to help with recovery without upsetting my stomach :)

  12. You’re pancakes always look so freakin good- love how thick they are! Believe it or not, I hate ginger so anything gingerbread is a no-go for me..must have had a bad experience back in the day! I’m looking forward to THanksgiving too- my family doesn’t celebrate it but a few friends and I are celebrating with a potluck dinner!

    well, GREAT job out there yesterday and ur sore muscles are just merit to hard work! sorry to hear that ur gym is sorely stuffy, i would have died!!

  14. i LOVE gingerbread… it makes me feel all festive. i used to make xmas gingerbread biscuits and hang them off the tree :-)
    Yay for the starbucks red mugs, but holy penny-ouch… FOUR pounds for a panini? i hope it was good!!

    • I still do the gingerbread cookies as xmas tree decorations every year! Tradition :) But they never last more than a week though haha!

      And I know, that was CRAZY expensive! I didn’t realise until I got to the till, and it was kinda late to back out then, but it was worth it :)

  15. Yum for all the gingerbread :) I love it so much! after my first half marathon I was stiff for days! I was so tired at the end that I just collapsed in the car- we had about a 45 min drive so the perfect amount of time for my legs to totally seize up! Not good!

  16. I did a little TRX saturday morning before Pump – a few planks, yesterday felt like i had been punched in the stomach! Although the abs are better this morning my ribs still feel like they’ve taken a few rounds.

    Where do you get your giant couscous from? And how do you dip the chips in the pb? Those things are tiny!

    • Woah TRX sounds so intense! I’ve heard some impressive things about it- no wonder you felt that way!

      Giant couscous from Sainsbury’S! Merchant Gourmet brand :) And for dipping, I get a spoonful of PB outta the jar, and then dip from that. Works like a charm ;)

      • That sounds a bit boring! Oh you spoilt the image i had in my head of you trying to fish choc chips out of a jar with your hand & getting PB all the way up your wrist & making a real mess! :)

  17. Strangely, I have been craving all things gingerbread – I think it’s after I saw that gingerbread porridge by Dorset Cereals on Maria’s blog and Racheal’s Delicious Journey. I used to love Parkin when I could eat wheat (it’s quite a Northern thing – I don’t know if it’s really around in London!) and I ended up trying to recreate the flavours with a bowl of oat bran last night (cinnamon/ginger/vanilla essence/stevia). It worked quite well, but I’d much rather have some of that gingerbread porridge if I can find it.

    I only really get DOMS from Body Pump, and that’s when I’m being silly with the weights :P

  20. Oh my goodness those pancakes look DELICIOUS! Gingerbread is one of those things I always thought I hated, then had a gingerbread cookie freshman year of college and have been in love since. I just bought a bag of green lentils but have NO clue what do do with them. Any favorite recipes?

    • I LOVE green lentils! I have them at least once a week! Sorry to be completely unhelpful, but I have no recipe! I just make them in vegetable stock and add lots of Indian spices, like turmeric and garam masala.

      But you can use them like any other lentil and make daal or something? Happy Herbivore has a good daal recipe :)

  22. I love gingerbread… men.. mostly! I had a gingerbread latte from Costa the other day and it was delish!

    I find its perfectly acceptable to dip chocolate in anything.. especially more chocolate :)

  23. I’ve been craving a gingerbread latte ever since I had on over a week ago! I tried making a gingerbread protein muffin yesterday, but not enough spices I think, so I must try again!
