Peanut Butter Obsessions

HEY friends!! Hope you’re all having a good week! And thanks for entering my giveaway guys, and keep the entries coming!
First up, important RUNNING NEWS!!! So I went and saw the physio today, and the prognosis? I don’t have a stress fracture, but I do have BONE STRESS. My physio described this as ‘Stage 1 of a stress fracture’, and said it was a very good thing I stopped when I did! He does think it is caused by my bone density issues, although I’ll hopefully be getting a full prognosis and everything next week.
SO next week I will go back and properly find out what is going on, and see about my running plans, and whether I can still do my half marathon! Honestly, I don’t have high hopes, seeing as it is less than four weeks away, but what’s meant to be is meant to be, and I have a LONG running career ahead of me. Paula Radcliffe had better watch his back cos she ain’t got nothing on me ![]()
Conveniently, my physio place is built in to my gym! So I literally went there straight from my sweaty workout!
I LOVE spinning, and I am thinking of getting qualified next year and teaching part time for some mula! Whadya think? I would have Disney themed spin classes and it would be AWESOME! ![]()
So then straight off to the physio…
I didn’t even have time to shower first…but at least I remembered to shave my legs first, unlike last time!! ![]()
Have I mentioned I have no hot water at the moment? Keeping it classy here as always with my Leg Shaving Setup:
Hot water from the kettle in a pan is the way to go.
My physio appointment was a late one, so by the time I got home, it was 10pm! So I threw together a quick dinner:
Sundried tomato wholewheat couscous, veggie sausages, and cucumber. Ready in 10 minutes flat ![]()
Dessert was a mini PB muffin, topped with Justin’s Chocolate Hazelnut Butter:
These are my new FAVOURITE muffins!! I love them so much!!
Healthy Peanut Butter Muffins
These muffins are delicious, and so quick and easy to make! High in protein and fibre, with sugar free and fat free options, they are the perfect snack and tasty treat!
Vegan. Makes approx 8 small muffins, or 6 large ones
- 1 cup wholewheat flour (I used wholewheat spelt)
- 3/4 cup peanut flour
- 2 tsp baking powder
- 1 tsp cinnamon or ground mixed spice
- 1/3 cup MoreFiber Stevia Baking Blend, or regular sugar
- 1 cup soy milk, or milk of choice (I used just over a cup, add more if needed)
- 4 tsp crunchy PB (or sub all/some unsweetened applesuce for a fat-free option)
- Preheat your oven to 350F/180C. Line or grease a muffin pan.
- Mix dry ingredients together well (flours, baking powder, spices, sugar). Add wet ingredients and stir until just combined. Note: the batter will be VERY thick because of the peanut flour, almost more like cookie dough. It is supposed to be quite thick, but if you need to add more milk, then go ahead.
- Spoon into muffin cups/cases and bake for approx 10 minutes. Let cool on a cooling rack, and ENJOY!!
Nutritional Info: 95 calories, 7g protein, 1g fat

It is SO GOOD in oatmeal too!!
And best of all when slathered in chocolate hazelnut butter ![]()
Just pretend you can’t see the finger marks in the jar, ok? That is officially my favourite nut butter in the WHOLE WORLD and I have a few spoonfuls/fingers every day! ![]()
If you could teach any form of exercise, what would it be? Well really it would be running, but spinning comes in second! I’d also love to teach yoga someday.
What time do you normally eat dinner? I’m always fascinated that people eat at such different times! Usually for me at about 8-9pm because of running training and stuff. I have a LOT of afternoon snacks to make up for the long gap!
Your FAVE nut butter in the WORLD? Justin’s Chocolate Hazelnut, then probably Justin’s Maple Almond, or PB&Co White Chocolate Wonderful and Cinnamon Raisin Swirl!

I have to say I loved this post right from the title, because peanut butter is a HUGE obsession of mine as well!!! I have like three jars…and was unaware that justin’s makes hazelnut butter sooo looks like I will soon have four haha. My favorite nut butters are the natural ones where you have to mix in the oil – and crunchy all the way!

So glad it’s not a stress fracture! If I could teach a fitness class, probably pilates , stretch or zumba. As for dinner, my schedule is so awful that I don’t have a real ‘dinnertime’. I wish! But I usually eat anywhere between 6 and 10. And favorite nut butter? Everything.ever. Especially from Trader Joe’s.

I actually used to be an instructor, maybe 4 years ago:) I teached Shape, Pulse and Pilates! But then I got really bored with classes, and started running

I 120% urge you to become a spinning instructor–> i haven’t even met you in person but you still manage to always put me in a good mood and inspire my to meet my fitness goals so i can only imagine how your ‘students’ will feel…I am actually already jealous of them that they have u as an instructor!

haha, I made the mistake of forgetting to shave my legs the last time too! I am beyond obsessed with that nut butter, I never thought anything would be better than DCD but that is! I’m going to attempt to make my own raw version in my food processor!

I’d love to be a distance running coach. I generally have dinner somewhere between 6-7pm…I can’t hold out that long for a late dinner.

I would never teach running actually: I’m selfish and it’s my ‘me’ time. Besides, what would the Jessica training plan be? ‘Run until your bones shatter and then run some more’ probably!
I’d rather teach Body Pump or spin: my mystery course in November is actually the exercise to music level 2 certification which is the foundation for teaching both. Ideally I’d do Body Attack because I LOVE it but my bones and co-ordination just aren’t up to the task.
I eat dinner 8-9pm too: dinner twins
SO happy it isn’t a stress fracture! I’m doing a cautious (so I don’t make my fractures worse) happy dance for you.

THAT IS SO EXCITING ABOUT YOUR COURSE!! I have ALWAYS thought that you would make an AMAZING BP or spin instructor, since you are so ultra-fit and strong and passionate about them!! I think you need to move to London though so you can take MY classes!

YAY Emma! That is such good news! At least you can now work on avoiding a stress fracture than having to go through the lengthy healing process after developing one!
I eat my dinner at weirds times because of training too! I usually have something carby at 5:30 after work to hold me over until 8pm when I have a big snack!

So glad it’s not a stress fracture! You are so good at listening to your body, but sorry that you have to stop running for now. I’m thinking about becoming a spinning instructor, and there’s a instructor one-day orientation course next weekend at my campus! Now, I just have to decide if I wanna spend the $ for it.

That’s such a late appointment. but whatever that grain is looks tasty! and those muffins!!!! I need to make muffins pronto but I’m leaving soon. if I went through them like you do, I’d be fueled and get them gone before I’m gone!
I’d take taht spinning class!! I think I’d teach zumba or my new love, kickboxing!! Or just wild crazy times where you dance to music. yeah
I shave daily, although it’s not really needed. I don’t know what i’d do without hot water!
I usually eat dinner anywhere from 530-8pm. It depends on hunger and what I’m about doing.
and I can’t pick a favourite nut butter. I love them all!!

Hi Emma! I’m really glad to hear that you don’t have an actual stress fracture. I know how devastating that would be for someone who is such a successful runner! I’ve never tried spin class but a Disney-themed one sounds super fun.
I would go! The muffins you made look really yummy! I made some the other day and they were pretty awful.
Not exactly sure what went wrong but I guess the recipe wasn’t great.

Moving on, I’m so happy that you caught your injury in an early stage! That and it’s making me super cautious because my shins have been acting up, though I’m 99% sure it’s shin splints and I’ve been doing the jump test like every 10 minutes just to be sure. You would be the best spin instructor ever. I’d totally be at those disney classes every class. Though I would be a running coach if I could do anything.. and hoping it happens on day!

Shin splints are horrible!! Ice ice ice is the way to go!! And shin strengthening exercises twice a day! You will be FINE though since you’ve caught it early

I’m so glad it’s not a fracture! :] I hope it’ll heal quickly though. I love the muffin recipe! I got my first package of peanut flour recently and I don’t quite know what to do with it. Although, it’s delicious stirred into some soy yogurt. I’m giving these a try as soon as possible. I usually eat dinner around 8-9pm too. I do my afternoon snacking though so there’s no problem
My favorite nut butter in the world would have to be Barney butter! Justin’s Chocolate Hazelnut is very good too, but I only tried it one time from a squeeze package. I need to get a full sized one and start getting into the world of flavored nut butters. They all sound amazing!

If I was going to teach it would be something to do with dancing. I eat dinner between 7 and 8 but yesterday I ate at 12:30 (which was actually this morning). I hope your stress fractures get better!!
