What I’m Lovin’

HEY friends!! I’m currently dealing with (ANOTHER!) computer virus, so I’ve had trouble posting, reading emails, etc., but HOPEFULLY it should be all sorted now!
Today’s pancakes will seriously blow your mind. They were SO good that I’m still thinking about them hours later!
Vegan, serves 1
- 1/4 cup spelt flour+1/4 cup peanut flour (or just 1/2 cup flour of choice!)
- 1/2 t baking powder
- pinch of salt
- 1T maple syrup
- 1/2 cup non-dairy milk (more or less for desired thickness!)
- 1.5T peanut butter
- Mix dry ingredients together, then add the wet and combine well.
- Make your pancakes!
Best start to a Sunday EVER!! I ran to church, munching on the last pancakes sandwich, and then dashed back to watch the World Athletic Championships. If you don’t know, Mo Farah was taking on the 10,000 meters, and it was seriously the most exciting race!! I was literally screaming at the TV! Here is the nail-biting finish if you didn’t see it:
I ended up putting off MY run to watch other people run. Or not run in the case of Usain Bolt. Can you BELIEVE he got DQed?! Seriously, I would be KICKING myself if I was disqualified for a false start! Anyway, I eventually got my butt outta the door for my run!
It was a GREAT run!! I seriously felt AMAZING afterwards! I think Mo inspired me I then did some, er…(not-so)active recovery…

So today I’ve been LOVING pancake sandwiches, watching athletics, long runs, and (not-so)active recovery, but there’s SO MANY MORE things I’m loving right now!!
Summer fruits! My favourite season is almost over, so I’m making the most of the food…

With PB, maple syrup, and strawberry preserves! I have been doing this about 10 times a day. It is SO good!!
Training plans. I LOVE making and following them!! I know they’re not for everyone, but they really help keep me on track and get me motivated! Here’s my current one for those of you who asked:
I’m sooo excited for my first +30 mile week since my injury began back in March!! Yaaay!!
