What I’m Lovin’

HEY friends!! I’m currently dealing with (ANOTHER!) computer virus, so I’ve had trouble posting, reading emails, etc., but HOPEFULLY it should be all sorted now!


Today’s pancakes will seriously blow your mind. They were SO good that I’m still thinking about them hours later! Smile with tongue out



PB&J pancake sandwiches (inspired by Katie’s ice cream sandwich pancakes)

Vegan, serves 1

  • 1/4 cup spelt flour+1/4 cup peanut flour (or just 1/2 cup flour of choice!)
  • 1/2 t baking powder
  • pinch of salt
  • 1T maple syrup
  • 1/2 cup non-dairy milk (more or less for desired thickness!)
  • 1.5T peanut butter
  1. Mix dry ingredients together, then add the wet and combine well.
  2. Make your pancakes!


Best start to a Sunday EVER!! Open-mouthed smile I ran to church, munching on the last pancakes sandwich, and then dashed back to watch the World Athletic Championships. If you don’t know, Mo Farah was taking on the 10,000 meters, and it was seriously the most exciting race!! I was literally screaming at the TV! Here is the nail-biting finish if you didn’t see it:


I ended up putting off MY run to watch other people run. Or not run in the case of Usain Bolt. Can you BELIEVE he got DQed?! Seriously, I would be KICKING myself if I was disqualified for a false start! Anyway, I eventually got my butt outta the door for my run!



It was a GREAT run!! I seriously felt AMAZING afterwards! I think Mo inspired me Smile I then did some, er…(not-so)active recovery

So today I’ve been LOVING pancake sandwiches, watching athletics, long runs, and (not-so)active recovery, but there’s SO MANY MORE things I’m loving right now!!


Summer fruits! My favourite season is almost over, so I’m making the most of the food…

With PB, maple syrup, and strawberry preserves! I have been doing this about 10 times a day. It is SO good!!


Training plans. I LOVE making and following them!! I know they’re not for everyone, but they really help keep me on track and get me motivated! Here’s my current one for those of you who asked:

    And I’ve totally been eyeing a fancier camera. Ahhh, I want one so badly but I have no idea how to use one. I’m going to have to learn! :)

  4. you have the some of the best pancake recipes ever! Though I have to say, it’s hard to give up eating my breakfasts with a bowl & spoon. This pretty much looks like an ideal day! I’m just trying to soak up the last of summer before I have to go back to class in a week :-(
    And I’ve never made a training plan! I’ve actually never trained for anything – planning on changing that next summer!

    Atm I’m loving on mud pie ice cream from Edy’s! Twice a day baby. And my favorite season is definitely fall. I’m waiting for the pumpkin/nutmeg flavors!

    • AAH really?! I knew we were secretly twins ;)

      Haha I LOVE when people say I’m tanned! I’m naturally tanned cos I’m half Indian, but I have gotten more tanned this summer! And trust me, it rains pretty much every other day here, so I don’t think you would want London weather most of the time! :P

      P.S. Pumpkin and nutmeg flavours are the BEST!!

  8. I am loving pancakes sunday, yay :) And I just got an iPAD, and my madre came to visit me today, so it has been a great day! My favorite season is summer, I love it soo much, the fresh fruits, hot weather, sunny days, swimming, ahhh! Fall is nice for a while, still warm enough but filled with rich colors and tastes, and I really dislike winter… it is okay for a day of sitting my the fire, then I am over it. I am not training for anything but if I were I would so come up with a training plan, I like to plan ahead :) And amazing run girl, 10 miles… woohoo!

  9. Everything tastes better as a sandwich- double the fun! What I’m loving right now: smoothies after discovering xanthan gum! Those babies thicken up SO much with just a teaspoon of the stuff! Also, peanut butter and tofu sandwiches–> a nice protein boost to the standard PB sarnie!

    I am loving a lot of things – summer produce (that´s slowly coming to an end), morning runs, evening yoga, baking strawberry cakes, making huge jars of sunflower seeds butter… yes, I am a bit food cetered :)
    My most favorite season is Autumn, everything is so colorful and pretty..but Summer is close second place :)

    i have nottt been doing a training plan for running but rather for lifting.. hah yeah.. im just gna be running 2x a week and ill hope thats enough! you will rock this half!

  13. Have you tried the rude health multigrain thins? If you’re a fan of pimping rice cakes, deffs try pimping some of those – they’re so good sandwich-style! That’s one of my current loves… Summer is definitely my favourite season too, I’m already sad that the weather is changing again. Plus it means I’m going to have to buy a new coat, which I totally can’t afford. Stupid winter!

    I gotta agree with you on the training plans….i’m obsessed with them! Making them is highly entertaining for me too lol. I actually make training plans for my cross-training too….even though its highly unnecessary hahaha

    I have to say Fall is my favorite season because I love the cool weather and preparing for the holidays and things like Halloween and hay rides and pumpkin scents and apple seasons – but you are soooo on with the summer fruit haha.

  19. That pancake sandwich (I just wrote “sandwish”… wishful thinking?) = epic. I’m loving all the things you’re loving! I’m sad that all the fresh fruit is going to be gone soon too, but I love Fall and I’m looking forward to the beautiful colors, the warming foods, and that intoxicating smell that hits the air. Swooon. And I’m a big fan of plans in general. I find it so much easier to motivate myself to work out when I have a set plan to follow… but sometimes I burn out and have to throw my plans to the wind and just lay the pressure off for a while.

  20. i eat rice cakes alll the time. love them. with nut butter is of course the best! I’m also on a big english muffin kick with coconut butter. soo tasty.

    im sad to see summer fruit going!!! im glad to see summer go though only because i live in arizona and we are still 110 degrees!

  21. those pancakes look delish! at the moment i’m loving strength training and painting my nails :) oh, and LUNA bars!
    I prefer training plans because they give me some structure & organization, it makes me feel accountable. otherwise i’m not so motivated
    my fave season is a tie between summer and fall. summer is just so chill, and i am in love with the sun. but fall makes me think of blue skies and orange leaves, nice running weather, apple-picking, pumpkins, and cinnamon. in general just cozy :)

  22. Love what you’re loving! I love making pancake sammies with jam but hadn’t thought to make the pancakes pb flavoured! I’m new on the training plan front as I’m pretty new to structured exercise but love it so far :) And I’ve stolen the pimped up rice cake idea. Such a great snack. I love summer too but I’ve kind of had enough of the heat now, dont’ know if it’s going to ever cool down here in Barcelona though….xxx

    Early birthday pressies are soo frustrating haha, i’ve got one which I’ve given to my mum to hide to stop me ‘accidently’ ripping open!
    I’m a wing-it sort of girl but am going to try the program from NROLFW in a few days.
    And starting to love yooooou!!

  24. Your pancake sandwich looks amazing! I’m ordering a new stovetop griddle and I think I’ll have to introduce it to these pancakes ;) I think I’ll try subbing the PB and flour with almond meal and butter to see how that works. PB flour is the one flour I cannot find around here =( Congrats on your 30+ mile run this week!

  25. Oooh that is my new camera!! I am still getting used to it but i’m laving it and it makes me feel pretty epic :P

    My favourite season is Autumn definitely, i love the leaves turning brown & the weather getting colder but not too cold & being able to wear winter clothes & pumpkin & halloween, SO EXCITED! Summer is my least favourite because being warm/hot is one of my pet peeves!

  27. Wow, such a strong run!

    I love summer. Spring I can handle, because it’s furthest from Winter. I can’t abide winter, particularly because my birthday falls then and it’s not a happy time for me, but mostly due to the extreme weather we’ve had for the last two years. Nothing will ever get me to like snow and ice. Autumn is kind of ‘meh,’ because it signals the impending doom of winter.

  29. At the mo’, I am loving you as per usual. I am also loving muffins as per usual… and I think I may have to make those pancakes in waffle form. I’m loving waffles. Oh I am LOVING putting the finishing touches on your present.. just waiting for something from my friend, hopefully I can send it out this weekend! As far as training plans go, I just do what my coach tells me day to day, which is kind of scary because I don’t know what to expect!
