Friday Faves!!

HEY bloggie friends!! I am currently writing this at midnight. Not good. So I’ll make this a quick Friday Faves! Smile with tongue out


1. AWESOME Friday breakfast!! Peanut Butter Cookie Dough Baked Oatmeal:DSC00856

I bought that ceramic dish specially for it from the pound store yesterday. Win win Smile


It’s like peanut butter cookie dough cake for breakfast!! There were also a lot of extra chocolate chip casualties along the way Winking smile


2. BodyBalance class!! It’s kinda like a yoga/pilates class, and it is SO fun and awesome!! (Recycled photo alert)


I actually woke up in the morning with the WORST achey, stiff legs EVER! A week of long intense cycling did it, and upping my weights in BodyPump yesterday was the final nail in the coffin. I could barely MOVE! But BodyBalance made me feel awesome! Love that class! I was actually planning on going to hot yoga for the first time, but my class was cancelled! Thankfully there’s one on Saturday night woop! Open-mouthed smile


3. Peanut Butter Cookies. I am OBSESSED with these. Not even kidding, I DREAMT about these last night!DSC00804

Healthy Peanut Butter Cookies

(Vegan, wheat free. Makes about 10 large cookies, allowing for dough consumption of course)

These cookies are soft, peanut buttery and totally addictive. Plus, they are healthy too! Wholegrain flour, only 2 tbsp of sugar and all those healthy fats of course!

  • 1 1/4 cup wholegrain spelt flour, sifted
  • 1 tsp baking powder
  • 1⁄2 tsp baking soda
  • 2 tbsp unrefined sugar
  • 1⁄4 tsp sea salt
  • 1⁄3 cup 2 tbsp natural peanut butter (drippy is best)
  • 1⁄2 cup agave nectar
  • 1⁄4 tsp blackstrap molasses
  • 1 tsp pure vanilla extract
  • 3 tbsp melted vegan spread (or oil)
  1. Preheat your oven to 350F/175C and line a baking sheet with non-stick paper.
  2. Sift the flour, baking powder, and baking soda together. Then add the sugar and salt, and mix well.
  3. In a separate bowl, combine the wet ingredients (peanut butter, agave, molasses, vanilla, melted butter) until well combined.
  4. Add the wet mixture to the dry and stir. As it is almost fully combined, stir in the extra 2 tbsp of PB, but don’t stir in fully so you get extra yummy bits in the batter!
  5. Place large spoonfuls of the batter on the sheet, and press with a fork to give that classic PB cookie look. Bake for about 10 minutes until just golden. Let cool for 1 minute on the sheet, then remove with a spatula and place on a cooling rack. ENJOY!!

4. My bro’s 18th birthday!!DSC00852

The fam and I went out for a meal tonight to celebrate at an Indian restaurant. Here’s how I roll:


  • Double Dipping. Sorry guys, but I am a double dipper. Dips to share? I don’t care. Poppadum straight in, to mouth, repeat. It grosses everyone out.


  • Order a starter which really is just a small meal. Lentil patty things were SO good!!


  • Then order about 10000 dishes (and bread). Wouldn’t want to miss out on any good dishes!


Not much on there? Yeah that was just my ‘sampling’ plate where I see what I like the best. I then proceeded to eat more paratha (bread), dal and more chana masala until I almost burst, but it was SO WORTH IT! Love Indian food!!


  • Coerce the birthday boy into letting the restaurant do ‘The Birthday Special’ for him. This included the waiters singing 10 verses of a jazzy Happy Birthday, giving him a cool turban to wear, a special Birthday Sorbet, and forcing the whole restaurant to sing to him. Let’s just say Bro wasn’t too pleased with me…DSC00908

    And speaking of amazingness… GAH THOSE COOKIES! My favorite are chocolate chip oatmeal, but I def. wouldn't turn down an [almond butter] chocolate chip cookie :D

    As for my Friday faves?
    I’m home from college, which means I finally get to go back to the crazy intense morning workout classes at my home gym. Today was “Triple Threat” and let’s just say it kicked my you know what. In the best way possible. I left a sweaty mess with a crazed smile shockingly similar to yours…haha

  7. I loooooooove Indian food!!! You are making me crave it so much now! I think I’m going to get really hungry one morning and then go to an indian buffet for breakfast/lunch so I can get my money’s worth and pig out until I reach food coma!

    Honestly — you’re gonna think I’m crazy — I don’t really like peanut butter cookies! I think they’re wannabes. They just don’t compare to straight up peanut butter. My favorite cookie is white chocolate macadamia or a molasses cookie. Or Welsh cakes, if you can call them cookies, but they’re more like scones.

    Let’s see- my Friday faves have to include curried lentils and sitting on the hammock with my mom and dad!

    Cookies? Anything with melty chocolate chips, and soft cookies > crisp ones any day!

    ME AND MY DAD ARE THE SAME PERSON! I get a lot from my mom, too, but my humor / personality has always been a ton like him.

    and I laughed real hard about the photos of ur embarrassed turbined brother and then harder when i saw the similarity betweenur dad and u..totallllly twins.
    My friday fav? so nice of u to ask! Had to be Cycle class that i went to–climbing “hills” and doing surges during the choruses of pop songs by Ke$ha and other stuff i never listen to but actually enjoy while sweating alongside other lovely people
    My fav cookie? Peanut butter all the way baby! Thanks for ur recipe! and also for highlighting cck’s cookiedough oatmeal cake i must try that asap! And oh btw when u told mein no uncertain terms to go make cookiedough pancakes theother day i followed orders! (the next morning, first thing though!).
    I get along real well with my dad..i took after a lot of his interests..we love bicycling, we eat indian food like we hail from the great subcontinent natively (but we dont, we’re def white), go to the local coffee roaster/shop every day of our lives and we both luv jane austen..just big defining things ya know..

      YES I love cycle classes, especially with hill climbs and surges!! Ke$ha ROCKS in spin classes!! :D

  19. Peanut Butter Cookies! Those look to die for amazing :) I don’t usually dream about food…no…for me it’s much worse. ;) Sometimes I can’t get to bed ’cause I’m thinking about possible recipes to invent/ make from books/ blogs to look at….and it keeps me up. all. night. :B

    I love the sound of those pb cookies- they are very similar to ones I made yesterday from the Vegan cookie boo- peanut butter agave cookies- they had no sugar, but agave and brown rice syrup, wholegrain flour and a teeny bit of rapeseed oil. So good too :)

  24. Mmm that Indian food looks sooo yummy! I think Indian food is so great for vegans, there are always so many options! I think dal is my favourite though, it is great for bread dippage! : )

  25. I would LOVE an indian right now (well maybe half past 9 is a little early…)poppadoms are the best – I have such an addiction to mango chutney.
    Friday fave – got to have been chasing my housemate with a bottle of champagne after she finished her last exam (and lots of people around getting v irritated…) so funny!

    I like ED&BVs ‘you got chocolate in my PB cookies’ cookies…ro something. They’re amazing!!

    First, your dad is TOO cute! Love the photo! And you brother too, haha.. he looks happy ;)
    And the breakfast bake<3 AND the cookies- So much peanut butter and so little suger going on ther1 Just the way I like it!
    We have Body Balance at my gym too. I used to do it a lot before, now Im more into yoga. But I want to try the class again- I know i loved it before!
    I havent baked cookies in a while, but there is so many great vegan recipes out there! Yesterday i got a bag of Uncle Eddies Cookies in a food swap with Lindsay. i love them- so soft and chewey. Yum!
    And, i really crave indian food now. its one of my all time favorits. Especially Dahl!

  34. Favourite cookie = most definitely chocolate chip (or double chocolate chip, or double chocolate chip. Come to think of it, why have I never tried a carob chip cookie?)

    I’m both like and unlike my parents. I seem to have inherited the negative personality extremes from both!

  35. I need some of those dishes! I’ve been wanting to try baking oatmeal for the longest time ever. Your brother’s and dad’s faces in the pictures are just priceless! :D BodyBalance sounds awesome. Definitely something I wanna try out in the future. Friday favorites for me were oatmeal and grapes. I had oatmeal for breakfast and dinner too haha.

  42. I loveeee hot yoga! It’s awesome :)
    Good for you for listening to your cravings girl! I try to always give my body what it’s asking for but I don’t always listen to it so well. Hot yoga always makes me crave watery foods and fruit.
    My favorite nuts are almonds, cashews, and pistachios and coconut, of course, if it counts as a nut :) Even though I love PB I really don’t like plain peanuts very much.
