Happy

Happiness comes in many forms.

It can come in the form of breakfast cake.DSC05964

Quick Oaty Breakfast Cake (based on this amazing recipe)

Serves one hungry person (me! :P)

  • 1/4 cup (spelt) flour
  • 1/8 cup quick cooking oatmeal (I used Ready-Brek)
  • 1/8 cup oat bran (or flour/oatmeal etc.)
  • 1 tsp baking powder
  • 1/2 cup milk (I used coconut milk)
  • 2 tablespoons jam/unsweetened applesauce/canned pumpkin etc. (I used fruit-sweetened strawberry jam)
  • Couple of handfuls of mix-ins! I used dried blueberries and sultanas, but any dried fruit, chopped nuts, chocolate chips, etc will work!
  1. Grease a sandwich tin. Mix all ingredients together and pour into your tin.
  2. Place into an unpreheated oven at 210C for approx 15 mins, until done.DSC05959

Voila! I love how quick and endlessly customisable this is! I may have to try a chocolate one soon, with cocoa powder and chocolate chips…mmm…

  9. What a great post! Breakfast is my favourite meal of the day and I have to say a great bowl of oats takes a lot of beating! I also love a good breakfast wrap with apple and nut butter, yum!

    Chocolate, of course, makes everything better and I've been adding lots of cocoa to my breakfasts recently. Nothing beats a huge bowl of oats with rice milk, banana, PB and strawberry jam though. I enjoyed one this morning, alongside a rice milk latté I made.

  11. Yay glad you are so happy! Love those funny pictures :) Breakfast is my fave meal and my fave porridge is with pumpkin puree, dried cranberries and allspice. Yum. Must have that again soon.
    Lots of things make me happy- running (ands feeling strong with it)makes me happy- which reminds me- love the new shoes and awesome time! Baking makes me happy, seeing my friends makes me happy- I have lots to be happy about and so do you! Yay!

  12. I try and start my day off with green smoothies/juice/kombucha-but bfast cake sounds perfect! I just ordered new orange shoes-they're my 3rd pair, love 'em!

  15. I love being happy – and seeing other people happy makes me happy … so I have a big smile on my face now!
    Melon makes me happy – especially cantaloupe – it looks just like sunshine. Chocolate also makes me happy (obviously).
    Breakfast is my favourite. Full stop. Banana oatmeal is floating my boat in particular at the moment.
